Recipes and Pairings With Mustard Honey

Mustard honey's mild flavour and creamy, quick-setting texture make it easy to use. It spreads like butter when crystallised and melts smoothly into warm dishes. Here are six simple ideas. For background on why it sets so fast, see our mustard honey guide.

Remember: never give honey to babies under 12 months.

1. Honey curd bowl

Spoon thick curd or hung curd into a bowl. Top with chopped seasonal fruit, a handful of chopped almonds or raisins and a drizzle of honey. Add a pinch of cardamom for a festive touch.

2. Lemon-honey salad dressing

  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 2 tbsp oil
  • Salt, black pepper and a pinch of roasted jeera powder

Whisk together and toss with cucumber, onion, tomato and sprouts or with a chana salad.

3. Honey chilli paneer glaze

Stir-fry paneer cubes with onion and capsicum. Mix 1 tbsp soy sauce, 1 tsp chilli sauce, 1 tbsp honey and a splash of vinegar, and pour it in at the end. Toss for a minute until glossy. Adding honey at the end stops it from burning.

4. Honey and cardamom lassi

Blend 1 cup chilled curd with ½ cup cold water, 1 to 2 tbsp honey and a pinch of cardamom. Crystallised honey blends in easily once mixed with the curd.

5. Toast, roti and paratha topping

Spread crystallised honey on warm toast or a hot roti like butter. Try it with a sprinkle of sesame seeds or with a smear of ghee for an old-fashioned treat.

6. Warm honey-lemon water

Stir a spoon of honey into warm (not boiling) water with lemon. It's a comforting drink, though not a cure for anything. If you're managing blood sugar, remember that honey counts as sugar.

Cooking tips

  • Add honey at the end of cooking; high heat dulls its flavour.
  • To loosen crystallised honey, stand the jar in warm water.
  • Always use a dry spoon.
