Everyday Recipes With Wheat Atta: Beyond the Basic Roti

Most of us use atta for one thing: rotis. But the same flour makes snacks, sweets and quick breakfasts. Here are ten everyday ideas, with the key dough tip for each. For kneading basics, see our wheat atta guide.

Breads

1. Phulka

Soft dough, rested for 20 minutes, rolled thin and evenly, cooked on a hot tawa and puffed over the flame. Thin, even rolling is what makes it puff.

2. Paratha

Slightly firmer dough. Roll, brush with ghee, fold into a triangle or square, roll again and roast with ghee for layers. Stuffed versions like aloo or gobi need a softer dough that stretches around the filling.

3. Puri

Firm dough with a spoon of oil or ghee kneaded in. Roll small and thick-ish, and fry in hot oil; press gently with a slotted spoon to puff.

4. Methi thepla

Atta kneaded with chopped methi, haldi, chilli, a little curd and oil. Roll thin and roast both sides. Theplas are popular for travel.

5. Missi roti

Usually a mix of atta and besan with ajwain, onion, chilli and coriander. Roast on a tawa with ghee.

Snacks

6. Mathri

Stiff dough with plenty of ghee rubbed into the atta (or a mix of atta and maida), plus ajwain and salt. Roll thick, prick with a fork, and fry slowly on low heat until crisp.

7. Atta chilla

A quick breakfast: atta whisked with water into a pourable batter with onion, tomato, chilli and salt, then cooked like a thin pancake on a greased tawa.

Sweets

8. Atta ladoo

Roast atta slowly in ghee until golden and fragrant, cool slightly, mix in powdered sugar or jaggery, cardamom and chopped nuts, and shape into ladoos.

9. Atta halwa (kada prasad)

Equal parts atta, ghee and sugar is a common traditional ratio, with water roughly three times the sugar. Roast atta in ghee until deep golden, then add hot sugar syrup and stir until it thickens.

10. Atta pancakes

A simple whole wheat pancake batter with milk, a little sugar or jaggery and a pinch of baking soda makes a quick weekend breakfast with honey or fruit.
